2 ½ cupsrotisserie-style chicken breast
cooked, roughly chopped
1onion
small, diced
1carrot
peeled and sliced
1celery stalk
sliced
½ tspsalt
to taste
½ cupmilk
half-and-half, or coconut milk, optional
egg noodles
Cooked, or small pasta
Instructions
Step 1
Place broth, chicken, onion, carrot, celery, and salt in the pressure cooker. Stir gently.
Step 2
Cook on High Pressure for 8 minutes.
Step 3
Allow a 10-minute natural release, then carefully quick release remaining pressure.
Step 4
Use an immersion blender to blend until completely smooth and silky.
Step 5
Add milk or coconut milk if using; blend again.
Step 6
Add more broth if needed to thin.
Step 7
Stir in cooked noodles or pasta if desired.
Step 8
Season with pepper or herbs to taste.
