Roast beef for sandwiches

Sous vide for tender roast beef using a cheap cut of beef (e.g. Costco eye of round $5.99/lb 4.68lb in 2 pieces yields 2.34lb/ piece)

Instructions
Step 1
Season both pieces with rosemary salt and vacuum seal
Step 2
Place 1 piece in freezer to cook at a later date (tbd -- try cooking from frozen for same 20 hours)
Step 3
Sous vide the other at 131 degrees for 20 hours
Step 4
Remove from sous vide and refrigerate for 1 hour to stop cooking
Step 5
Cut open sous vide bag and save juice to container to serve as aus ju.
Step 6
Remove meat, dry with paper towels and season with fresh cracked pepper
Step 7
Sear in hot pan with oil for 30sec - 1min per side on all sides, then rest (preferably in fridge overnight to firm up before slicing)
Step 8
Slice thin as needed in v-slicer for making sandwiches.
