Ingredients

2.5 poundsboneless skinless chicken thighs
or breasts
4 cupslow-sodium chicken stock
1 x 15 ouncecan white hominy
drained, reduced from 25 oz
1 cupsgreen cabbage
shredded, adds fiber + bulk
1zucchini
medium, diced
2 x 4 ouncecans diced green chiles
1sweet onion
diced
1poblano pepper
diced
3 clovesgarlic
minced
2 teaspoonsground cumin
1 teaspoondried oregano
Kosher salt
black pepper
freshly ground, to taste
3tomatillos
medium, diced
½ cupfresh cilantro
chopped
1 tablespoonlime juice
freshly squeezed
Instructions
Step 1
Place chicken in a 6-quart slow cooker. Add chicken stock, hominy, cabbage, zucchini, green chiles, onion, poblano, garlic, cumin, oregano, salt, and pepper.

Cover and cook:

Low: 6–8 hours
Step 4
High: 4–5 hours
Step 5
Remove chicken, shred with two forks, then return to the slow cooker.
Step 6
Stir in tomatillos, cilantro, and lime juice. Taste and adjust seasoning.
