Crista's Thai Comfort Tikka-Saag Chicken

Ingredients
4 servings
Spice Blend
1 tspground cumin
1 tspground coriander
½ tspground cinnamon
½ tspground cardamom
or 3 crushed green pods
¼ tspground cloves
½ tspKashmiri chili powder
or mild chili powder, optional
½ tspsmoked paprika
for tikka warmth
½ tspground turmeric
black pepper
Fresh, a few cracks

Chicken & Sauce
1 lbchicken thighs
1 Tbspghee
1onion
small, thinly sliced
3cloves garlic
minced
1 Tbspginger
fresh grated, or 1 tsp ground ginger
salt
to taste
1 cuptomato sauce
½ cupcoconut milk
2 cupsspinach
packed, fresh or frozen
1 tsplemon juice
Rice
Instructions
Step 1
Cook the rice first. Rinse basmati rice. Cook with salt and cardamom. Set aside.
Step 2
Cook and brown the chicken by heating the ghee in a wide pan. Salt chicken. Brown both sides (3–4 min per side). Remove.
Step 3
In same pan, add onion. Cook until translucent and lightly golden.
Step 4
Add garlic + ginger. Stir until fragrant, not browned.
Step 5
Bloom the spice blend for one minute.
Step 6
Add tomatoes + coconut milk. Stir until smooth. Bring to a gentle simmer.
Step 7
Nestle chicken back in. Cover and simmer 3-5 minutes, until tender.
Step 8
Stir in spinach. Let it fully wilt.
Step 9
Taste. Adjust salt. Add lemon for lift.
