Instructions

Roast the Potatoes:

Step 1
Preheat oven to 220°C (425°F)
Step 2
Toss cubed regular potatoes and sweet potatoes with 2 tbsp olive oil, ¼ tsp salt, garlic powder, paprika, black pepper, and fresh rosemary
Step 3
Spread on a large baking tray lined with parchment paper (use two trays if needed to avoid overcrowding)

Roast for 25-30 minutes, flipping halfway, until golden and crispy
Step 5
Sprinkle with fresh parsley in last 5 minutes

Prepare the Turkey Mince:

While potatoes roast, heat 1 tbsp olive oil in a large non-stick skillet over medium-high heat

Season turkey mince with ¼ tsp salt, 1 tsp black pepper, 1 tbsp smoked paprika, 1 tsp turmeric, and 1 tsp dried rosemary

Break up and mix seasonings thoroughly into the mince

Cook the Turkey:

Add half the seasoned mince to the hot skillet

Break into small bite-sized pieces with a wooden spoon as it cooks

Cook for 6-8 minutes, stirring occasionally, until browned and cooked through (internal temp 74°C/165°F)

Remove to a bowl and repeat with remaining mince and 1 tbsp olive oil

Keep warm

Make the Garlic Herb Butter:

In the same skillet, reduce heat to medium

Add 3 tbsp butter and 6 cloves minced garlic

Cook for 45-60 seconds until fragrant (don't burn the garlic)

Return all cooked turkey mince to the pan

Toss to coat in the garlic butter for 1-2 minutes

Stir in 2 tbsp fresh parsley and 1 tbsp fresh basil

Remove from heat

Make the Aioli:

In a small bowl, whisk together light mayonnaise, sriracha, garlic powder, lemon juice, and black pepper until smooth

Taste and adjust seasoning if needed

Assemble Meal Prep Containers:

Divide roasted potato mixture evenly among 6 meal prep containers (~150g per container)

Add garlic herb turkey mince (~200g per container)

Drizzle with garlic lemon aioli (about 20g per container) or serve on the side
