Ingredients

16 ozrotini pasta
or bow tie
1 poundspicy ground sausage
3 cupsfresh spinach
1 cupyellow onion
diced
2 cupscherry tomatoes
8 clovesfresh garlic
whole and peeled
8 ozfresh mushrooms
2 Tbspbutter
divided
¾ cuppasta water
¼ cupheavy whipping cream
¼ cupgouda cheese
freshly grated
2 teaspoonsItalian seasoning
divided
½ teaspoonred pepper chili flakes
2 Tbspolive oil

Instructions
Step 1
Preheat oven to 400°. Place tomatoes, whole, peeled garlic cloves in oven safe container. Drizzle generously with olive oil. Place in over for 20 minutes.
Step 2
Boil pasta in lightly salted water to all dente.
Step 3
Using 1 tbsp of salted butter place in sautéed pan and sautéed mushrooms about 6 minutes on medium high heat, stirring occasionally. Using second tbsp of salted butter, add to pan, along with diced onions. Allow onions to cook approx 5-6 minutes, or until translucent. Sprinkle with half of the Italian seasoning. Spoon mushrooms and onions into bowl and set aside.
Step 4
Add sausage to the pan on medium high heat. Sprinkle with chili flakes, add or remove to your liking. Once sausage is cooked through, add onion and mushroom mixture to the pot.
Step 5
Drain pasta, reserving about 1 cup of the pasta water. Add pasta to mushroom, onions, and sausage. Reduce heat to medium. Slowly add 1/2 cup of pasta to pan, followed by heavy whipping cream. Add remaining Italian seasoning. Let simmer about 4 minutes, and evenly sprinkle cheese over pasta. Allow to melt for about a minute, then stir continuously until sauce has thickened.
Step 6
Remove tomatoes and garlic from the oven and dump directly into the pasta, including the olive oil. Mix together breaking up the garlic cloves roughly with spoon or fork.
Step 7
Add fresh spinach at the very end, allowing it to wilt, approx 3-4 minutes.
Step 8
Serve immediately. Sprinkle with fresh parmesan and Italian parsley, or nothing, because this pasta is banging as is.
