Step 1
In a large saucepan, add water and the quinoa. Bring to boil and then
reduce heat to simmer, covered, about 15 minutes. Quinoa is done
when the water has been completely absorbed and it fluffs with a fork.
Heat olive oil in a large skillet over medium high heat. Add mushrooms,
garlic and thyme and cook until tender. about 4 minutes. Season with
salt and pepper. Stir in quinoa until well combined. Serve with parmesan
cheese
