Ingredients
4 servings
1kgchicken breast
or thigh, diced
1 cupcoconut cream
or dairy cream
1 cuproasted red peppers
blended
2 Tbsplemon juice
2 Tbspbutter
or dairy-free spread
1onion
large, finely chopped
4cloves garlic
minced
1 Tbspgrated ginger
2 tspgaram masala
1 tspturmeric
1 tsppaprika
1 tspground cumin
1 tspground coriander
½ tspmild chilli powder
optional
1 tspsalt
1 Tbspmaple syrup
or sugar, optional
1 Tbspcornflour
2 Tbspwater
Instructions
Step 1
Add blended roasted red peppers, coconut cream or dairy cream, butter, lemon juice, all spices, garlic, ginger, and onion to the slow cooker. Stir well.
Step 2
Place diced chicken on top and gently fold in.
Step 3
Cook on LOW for 4-6 hours or HIGH for 2.5-3 hours. Stir halfway if possible.
Step 4
Taste and adjust salt/sweetness. Add cornflour slurry using 2 tbsp water for thickness and extra cream for richness, if desired.
