1.5 lbchicken breast
or thighs, sliced or cubed
2bell peppers
sliced
8 ozmushrooms
sliced
2 cupsfresh spinach
1 Tbspolive oil
or butter
3 clovesgarlic
minced

Instructions
Step 1
1. Cook the chicken
Step 2
Heat oil/butter in a large skillet over medium-high heat.
Step 3
Season chicken and cook 5–6 minutes until golden and cooked through.
Step 4
Remove and set aside.

2. Sauté veggies

In the same skillet, cook mushrooms 3–4 minutes until browned.

Add bell peppers and garlic; cook another 3 minutes.

3. Make the sauce

Lower heat to medium-low.

Add heavy cream, chicken broth, and cream cheese.
Step 11
Whisk or stir until smooth and creamy (don’t boil).

4. Finish

Stir in Parmesan until melted.

Add chicken back to the pan.

Fold in spinach and cook just until wilted (1–2 minutes).

5. Taste & adjust seasoning.
