Instructions

Step 1
1. Place the nuts or seeds in a small skillet over medium heat. Cook, tossing occasionally, until toasted and fragrant, 3 to 5 minutes.
Step 2
2. Place the kale ribbons in a large bowl and add the lemon juice and olive oil. Use clean hands to coat and massage the kale. Add ¼ cup of the dressing and massage again. Let the kale rest for 5 minutes. Transfer to a small bowl.
Step 3
3. On a shallow platter (my preference) or in a big bowl, lay out the dressed kale-this is the foundation of your salad. Arrange the vegetables, cheese, and toasted nuts or seeds on top. Drizzle the remaining dressing all over and dig in.
