Ingredients
8 servings
8 ouncesitalian sausage
mild, casings removed
15 ouncescan chickpeas
rinsed and drained
½ cupchopped onion
14 ouncescan diced tomatoes with mild green chiles
garlic
crushed
¾ teaspoondried oregano
½ teaspoonblack pepper
2 x 14 ouncescans chicken broth
2 cupswater
1 cupbaby spinach
1 x 9 ouncesfrozen cheese-filled ravioli
grated parmesan cheese
Instructions
Step 1
Cook sausage, onion, and garlic in a large saucepan or Dutch oven over medium heat for 5 minutes or until sausage is cooked through, stirring to break up the meat. Drain fat and remove to a medium bowl.
Step 2
Add broth and water to the saucepan; bring to a boil over medium-high heat. Add ravioli and cook for 4 to 5 minutes or until tender.
Step 3
Return sausage mixture to the saucepan with chickpeas, tomatoes, oregano, and pepper; cook for about 5 minutes until heated through. Stir in spinach and cook for 1 minute or until wilted. Sprinkle with cheese.
