4 small sweet potatoes
Olive oil
Salt & black pepper
🧀 Whipped Feta
200g feta cheese
½ cup Greek yogurt or cream cheese
1 tbsp olive oil
Zest of ½ lemon
🌶️ Toppings
Hot honey (store-bought or mix ¼ cup honey + ½ tsp chili flakes)
Crushed roasted pistachios
Fresh thyme or parsley (optional)

Instructions
Step 1
Boil sweet potatoes whole until just fork-tender (15–20 mins).
Step 2
Preheat oven to 425°F (220°C).
Step 3
Place boiled sweet potatoes on a parchment-lined tray.

Use the bottom of a glass to smash each one flat.
Step 5
Drizzle generously with olive oil, season with salt and pepper.

Roast for 25–30 mins until crisp and golden.

Meanwhile, blend feta, yogurt, lemon zest, and olive oil until smooth.

Spread whipped feta on serving plate.
Step 9
Top with crispy smashed sweet potatoes.
