fresh tarragon
3 clovesgarlic
finely chopped, finely chopped
fresh oregano
parsley
chives or thyme

2 Tbspextra-virgin olive oil
½ tspsalt
1 tspcoarse ground black pepper

Instructions
Step 1
Put 2 tablespoons of the chopped tarragon into a large bowl, along with the chopped garlic, the oregano, the juice of ½ a lemon, 50ml of olive oil, salt, black pepper and the chicken thighs.
Step 2
Marinate for 20 minutes (optional, or while you heat the grill, if using.
Step 3
Heat a cast-iron skillet on a medium heat. Brush off most of the marinade from the chicken thighs (reserving it for later) and cook them skin side down for 7 minutes, until golden and crisp.
Step 4
Turn the chicken over and continue cooking for 4-5 (or 7 mins if you’re worried about it being undercooked) minutes. Remove and allow to rest on your serving plate.
Step 5
Meanwhile, finely slice the rest of the garlic.
Step 6
Add the reserved marinade, sliced garlic and butter to the pan and cook for 2 minutes, until fragrant. Turn off the heat and mix in the remaining tarragon.
Step 7
Pour the buttery tarragon mix over the chicken. Squeeze over the juice of ½ a lemon, sprinkle with flaky sea salt, and serve.
