Instructions

Step 1
In a heatproof bowl, combine couscous and boiling water. Cover and let sit for 5 minutes, then fluff with a fork.

In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to create the lemon dressing.

Add feta, cranberries, parsley, and green onion to the couscous and toss gently.
