Instructions
Step 1
Fry 4 tbsp curry paste in oil for 5 minutes
Step 2
Cut chicken in to chunks and add to the pan and cook for 2 minutes
Step 3
Add the coconut milk and simmer for 5 minutes until the sauce has thickened and the chicken is cooked through
Step 4
Add the chopped coriander, tomatoes and spring onions. Simmer for 1 minute
Step 5
Adjust seasoning if required and serve
