Instructions
Step 1
Heat olive oil in a large skillet. While heating, add half of cheese to each tortilla, spread evenly.
Step 2
Add jalapeno and onion to the skillet. Cook until lightly browned.
Step 3
Add chipotles and diced tomatoes. Stir till combined and warm, about 1 minute.
Step 4
Add whisked eggs, salt pepper, onion powder, and garlic powder. Cook, stirring frequently, until eggs are cooked through.
Step 5
Add half of egg filling to one side of each prepared tortilla and sprinkle with fresh cilantro. Place one at a time in the skillet. Let cook until cheese is melted and tortilla is golden brown. Fold the tortilla in half, remove from heat, cut into four slices, and serve.
