Instructions
Step 1
In a medium saucepan, fill half way with water and bring to the boil. Add chicken and simmer uncovered, for about 8 to 10 minutes, or until cooked. Remove with a slotted spoon and let cool before slicing thinly.
Step 2
Meanwhile, over a medium high heat fill a large saucepan with water and bring to the boil. Add noodles and cook 3 to 4 minutes or until tender. Drain and place in a large bowl.
Step 3
To make the dressing, in a small bowl, mix soy sauce, rice wine vinegar and honey, mix until well combined.
Step 4
Add the dressing to the noodles, toss well. Add chicken, carrots, capsicum, chilli and spring onions and toss until combined.
Step 5
To serve, divide into two bowls and garnish with spring onions.
