Instructions

Step 1
For the Honey Chipotle Chicken Marinade, combine chicken thighs with salt, oregano, garlic powder, smoked paprika, cumin, chipotle paste, honey, and lime juice.
Step 2
Oven bake or air fry for 20-23 mins at 200C / 400F, broil for 2-3 mins for a crispy finish.
Step 3
Prepare cilantro lime rice by cooking prior Basmati rice, then mix with butter, onion, salt, turmeric, garlic powder, smoked paprika, cumin, cilantro, and lime juice.
Step 4
Create chipotle sauce by mixing yogurt, mayo, chipotle paste, pineapple, salt, garlic powder, onion powder, and lime juice.
Step 5
Serve chicken with rice, sauce and optionally with a side salsa of chopped tomatoes, red onion, bell peppers, cucumber, salt, pepper, and pickle juice.
