Instructions

Prepare the Syrup (so it cools completely)

Step 1
1. In a saucepan, combine sugar and water. 2. Bring to a boil over medium heat. 3. Add lemon juice and simmer for 7–10 minutes. 4. Turn off heat, add orange blossom water. 5. Let cool completely.

Qatayef

Step 2
1. In a large bowl, mix flour, semolina, yeast, sugar, vanilla, salt, baking powder, and cornstarch. 2. Gradually add warm water while whisking. 3. Blend (optional but recommended) for a smooth batter. 4. Cover and let rest 30–45 minutes until slightly bubbly. 5. Heat a non-stick pan over medium heat. Do not grease. 6. Stir the batter gently. 7. Use 1/3 cup of batter for each qatayef and pour into the pan. 8. Cook on one side only. 9. When bubbles form on top and surface looks dry, remove. 10. Place on a clean towel and cover so they don’t dry out.

Filling

Step 3
1. Mix Akkawi cheese, mozzarella, and cinnamon in a bowl. 2. If the Akkawi is salty, soak it in water for a few hours beforehand and drain well. Fill & Seal: 1. Place 1–2 tbsp of cheese mixture in the center. 2. Fold in half and press edges firmly to seal.

Fry & Dip

Step 4
1. Heat oil to 350°F (175°C). 2. Fry until golden brown on both sides. 3. Remove and drain on paper towel. 4. Immediately dip hot qatayef into cooled syrup for a few seconds. 5. Remove and place on serving plate.
