Instructions
Step 1
Sear the Chicken: Heat a drizzle of olive oil in a large, wide-based pan over medium-high heat. Season the chicken with salt, pepper, and a pinch of the spices. Cook for 5–7 minutes until golden, then remove from the pan and set aside.
Step 2
Sauté Aromatics: In the same pan, add the onion and cook for 3–5 minutes until softened. Stir in the garlic and the remaining spices (turmeric, cumin, cinnamon) for 1 minute until fragrant.
Step 3
Simmer Couscous: Add the giant couscous and sultanas to the pan. Pour in the hot chicken stock. Stir once, cover with a lid, and simmer on low for 12–14 minutes, or until the liquid is absorbed and the couscous is tender
Step 4
Combine & Finish: Stir the cooked chicken back into the pan for 2 minutes to heat through. If the mixture is too dry, add a splash more water.
