Instructions
Step 1
Pat the chicken dry and season both sides with salt and pepper.
Step 2
Heat olive oil over medium heat.
Step 3
Add chicken in a single layer.
Step 4
Cook 3–4 minutes without moving so it browns.
Step 5
Flip and cook another 3–4 minutes until just cooked through.
Step 6
Reduce heat to low.
Step 7
Add minced garlic and cook 30 seconds.
Step 8
Add lemon zest and stir gently.
Step 9
Turn off heat.
Step 10
Add lemon juice and fresh dill.
Step 11
If using spinach, fold in and let it gently wilt from residual heat.
