Instructions
Step 1
In stockpot over medium high heat, add olive oil and sauté mirepoix until translucent. About 3/4 minutes. Add chicken stock.
Step 2
Bring to a boil over high heat, then reduce heat to low and simmer half covered for 30 minutes.
Step 3
Add chicken, meatballs, tortellini, salt and pepper to stockpot. Simmer to heat added items for about 15 minutes.
Step 4
Add spinach and serve.
