1 poundlean ground beef
1yellow onion
medium, diced
1 ¼ teaspoonskosher salt
plus more as needed
1 x 3.2 ounceGolden Curry sauce mix
box, Japanese curry
2 ⅓ cupswater
1Yukon Gold potato
large, peeled if desired and diced
1carrot
medium, peeled, halved lengthwise, and thinly sliced crosswise
⅔ cupfrozen peas
do not thaw, optional
white rice
steamed, for serving
Fukujinzuke
Japanese pickled radish, for serving, optional
Instructions
Step 1
Cook the beef and onion. Sauté ground beef and onion together until the beef is cooked through and the onion is tender. You don’t need any oil in the pot; there’s plenty in the ground beef.
Step 2
Bloom the curry mix. Add the Japanese curry mix in a few pieces and stir until it melts and coats the beef and onion.
Step 3
Cook with the water and vegetables. Stir in water, a diced Yukon Gold potato, and sliced carrots. Cover and simmer until the vegetables are tender. If you’d like to use frozen peas, stir them in at the end and cook just until heated through.
