Instructions

Step 1
1. Preheat oven to 350°F.

2. Wash the chicken and cut it into eight serving pieces.
Step 3
3. Peel the garlic. Remove the stems and seeds from the jalapeño peppers.
Step 4
4. Put the garlic, peppers, orange juice, honey, lime juice, salt, and cayenne pepper in a blender or food processor. Blend on medium for 5 minutes or until the peppers and garlic are well chopped.
Step 5
5. Place the chicken in a roasting pan. Brush the glaze on the chicken liberally, but save about half for later.
Step 6
6. Cook for 1½ hours.
Step 7
• After 30 minutes, turn the chicken and glaze it again.
Step 8
• After another 30 minutes, turn the chicken again and use the remaining glaze.
