Smoky Paprika Chicken with Golden Berry Salsa

Ingredients

1 tspcumin
1 ½ tspsmoked paprika
1 Tbspkosher salt
1 tspgarlic powder
1 tsponion powder
2chicken breasts
lightly pounded to be even thickness while maintaining shape
6 ozgolden berries

2 earscorn
shucked and sliced off the cob

Instructions
Step 1
Mix the seasoning blend. Reserve 1 tsp for seasoning the veggies. Place chicken breast on a sheet pan. Dry them off and rub with the seasoning blend. Let them dry brine for at least 20-30 minutes.
Step 2
In the meantime prep the veggies. Preheat the oven to 375 degrees.
Step 3
Place the golden berries, corn and jalapenos on the sheet pan. Season with oil and the remainder of the spice blend. Place the chicken breasts into the center of the sheet pan. Drizzle with oil.
Step 4
Bake for 25 minutes until 165 F internally.
Step 5
Let the chicken rest. Slice and remove the seeds and core of the jalapenos. Reserve about 2 tbsp of whole corn and golden berries. Place the cilantro, lime juice, jalapenos, corn, golden berries, water, honey and a pinch of salt into a blender. Pulse until smooth.
Step 6
Slice the chicken. And top with as much salsa as desired. Top with remaining corn and golden berries. Enjoy!
