Creamy Tomato and Spinach Chickpea Penne Pasta

Instructions

Step 1
Fill a large pot with water and bring to a boil.
Step 2
While the water is heating, dice the onion and grate or chop the garlic.
Step 3
Add the pasta to boiling water. Cook 4-6 minutes or until al dente. Drain. Do not overcook.
Step 4
Heat the oil in a large pot over medium heat, add the onion and garlic, cook for 5 minutes or until translucent.
Step 5
Add the can of tomatoes and spinach.
Step 6
Add the oregano, basil, red pepper flakes, salt, and pepper.
Step 7
Add the tomato paste and Greek yogurt. Stir until both are dissolved into the sauce.
Step 8
Add the Parmesan cheese and lower the heat to a simmer.
Step 9
Add the pasta and stir together.
Step 10
Stir occasionally for 1 minute. Adjust the salt and pepper as needed and enjoy.
