Step 1
Cook rice according to packet directions
Step 2
In a large pan. saute the onion in olive oil for 3-4 minutes until soft
Step 3
Add water, soy sauce, honey alternative, ginger, and sesame oil to the pan and stir.
Step 4
Add rinsed red lentils directly into the sauce. Bring to a gentle simmer and cook for 10-12 minutes, stirring occasionally, until soft and slightly thick. If it gets too thick, add a splash of water.
Step 5
Meanwhile, blanch green beans in boiling salted water for 3-4 minutes, then drain.
Step 6
Serve the lentils over rice with the greens on the side.
