Easy Lentils and Rice

This recipe, adapted from The Frugal Gourmet, is an easy recipe to make for a crowd. It gets it's flavor from the browning of the onions so a little patience at the beginning goes a long way.

Instructions

Step 1
Sauté onions in the olive oil over low heat in a 4-quart saucepan until starting to brown (this part takes 10-15 minutes but is worth the patience!) Add stock, lentils, and if using brown rice, rice and salt and bring to a boil. Turn down to a simmer and cook, covered for 45 minutes. Let stand for 10 minutes before serving. If using white rice, cook lentils for 20 minutes and then add rice and salt and simmer another 20 minutes or until lentils and rice are done.
