Instructions

Step 1
Dice some green onions, shallot, red pepper, yellow pepper, jalapeno, and a head of cilantro.
Step 2
Mix with black-eyed peas, olive oil, salt, pepper, rice wine vinegar, garlic, and the juice of two lemons.
Step 3
Let it sit overnight in a glass container in the fridge.
Step 4
Pull out for a couple minutes and mix up really well—might need more salt, pepper, lemon, etc.
Step 5
Sometimes put feta on it before serving.
