Special occasion

I sent my husband to the store and he bought grape tomatoes instead of Roma. Oh well. It all worked out. I also used a can of Mexican corn. I personally don’t like Cowboy Caviar but I heard it was really good from everyone that ate it.

Makes about 5 servings if used for lunches. Double recipe for a week's worth of lunches for Amy & Tyler.
