1 teaspoonginger

Stir-Fry:
180glean beef steak
cut into thin strips, grass-fed if possible
1 tablespoonavocado oil
for cooking
1 teaspoonextra virgin olive oil
to finish
1 teaspoonsesame oil
to finish
3cloves garlic
minced
1 cupbroccoli florets
1 handfulfresh spinach
1 cupkale
roughly chopped
1red bell pepper
medium, sliced
0.5 x 60gcan sliced water chestnuts

Instructions
Step 1
In a bowl, whisk together the beef broth, soy sauce, coconut aminos, rice vinegar, arrowroot powder, turmeric, and grated ginger.
Step 2
Add the beef strips to the marinade and stir to coat fully. Let marinate for at least 10 minutes (or up to 30 minutes in the fridge).
Step 3
Heat the avocado oil in a large skillet or wok over medium-high heat.
Step 4
Add minced garlic and stir for 30 seconds until fragrant.
Step 5
Add the broccoli and kale; stir and cook for 2 minutes.
Step 6
Add the bell pepper and water chestnuts; stir, cover, and cook for 3–4 minutes until vegetables are tender-crisp.
Step 7
Remove vegetables with a slotted spoon to a bowl, reserving any juices.
Step 8
Pour the beef and marinade into the hot skillet; cook and stir until browned, about 4–5 minutes.
Step 9
Return vegetables to the skillet; add the fresh spinach and toss everything together.
Step 10
Cook for a further 1–2 minutes until spinach wilts and everything is heated through.
Step 11
Remove from heat. Finish with a drizzle of extra virgin olive oil and sesame oil.
Step 12
Serve immediately — with a small portion of brown rice or cauliflower rice to manage your blood sugar response.
