Ingredients
3 servings
1 cupchickpeas
cooked, or 1 can, drained
½ cupedamame
1potato
medium, diced
2 cupslettuce
chopped
1 cupcherry tomatoes
halved
0.5avocado
diced
0.25red onion
finely chopped
⅓ cupfeta cheese
1 Tbspfresh dill
1 Tbspfresh parsley
1 Tbspolive oil
for roasting
½ tspsalt
¼ tspblack pepper
dressing
3 Tbspplain yogurt
1 Tbspsour cream
1 Tbspolive oil
1 Tbsplemon juice
½ tspgarlic powder
¼ tspsalt
Instructions
Step 1
Drain the chickpeas well and pat dry.
Step 2
Toss chickpeas with a little olive oil and salt.
Step 3
Air fry at 400°F for 14-16 minutes, shaking once, until crispy.
Step 4
Cook the diced potato with olive oil until golden.
Step 5
Chop tomatoes, onion, herbs, and avocado.
Step 6
Whisk all dressing ingredients until smooth.
Step 7
Combine lettuce, edamame, tomatoes, onion, potatoes, feta, and herbs in a bowl.
Step 8
Pour dressing over the bowl and mix gently.
Step 9
Top with crispy chickpeas before serving.
