Step 1
Pre-heat oven to 450 F. Chop boiled sweet potato, eggplant, red pepper, red onion, and pour drained chickpeas into pan. Top with olive oil, salt, and pepper.
Step 2
After 30 minutes, remove from the oven and cool off until warm. Add it over a bed or arugula and top with pine nuts and feta.
Step 3
Mix 2 tbs olive oil, 1 tbs balsamic glaze, and 1 tbs maple syrup for the dressing. Add salt and pepper to taste and enjoy!
