Instructions

Step 1
Whisk 3 tablespoons flour and 1/2 cup water in a saucepan until smooth.
Step 2
Cook over medium heat, whisking constantly, until a thick paste forms.
Step 3
Remove from heat and let cool to lukewarm.
Step 4
In a bowl, combine remaining flour, milk, remaining water, butter, sugar, salt, yeast, and the cooled tangzhong.
Step 5
Mix and knead into a smooth dough (about 6 to 8 minutes).
Step 6
Place dough in a greased bowl, cover, and let rise until puffy (1 to 2 hours).
Step 7
Deflate and shape into a log.
Step 8
Place in a greased loaf pan, cover, and let rise until about 1" above the rim (about 1 hour).
Step 9
Bake at 350°F for 30 to 35 minutes until golden brown.
Step 10
Remove from pan and cool before slicing.
