1 cupfrozen corn
8 ozvegan chicken
2 x 15 ozcans cannellini beans
1red onion
diced
7 ozcan green chiles
1jalepeño
diced

Instructions
Step 1
Preheat oven to 375
Step 2
Combine veggie broth and salsa in pot. Bring to boil.
Step 3
Rinse rice and spread evenly across bottom of 9x13 pan.
Step 4
Combine veggies, beans, and chicken in large bowl, then spread evenly atop rice.
Step 5
Pull oven shelf halfway out. Place casserole dish on shelf. Pour boiling liquid evenly over dish. Cover dish with tinfoil, then carefully replace shelf and close oven.
Step 6
Bake for 45 min or until rice is cooked.
