Instructions

Step 1
Mix dry ingredients in a large bowl
Step 2
Mash banana (I prefer to puree in a food processor)
Step 3
Mix remaining wet ingredients together with the banana in a separate bowl, except the egg
Step 4
Whip egg (can use 4 large eggs instead of egg whites)
Step 5
Mix wet ingredients into the dry ingredients, and gently fold in the whipped egg last
Step 6
Spoon into muffin pan lined with paper cups. Note the mix will be thick Bake at 350 F for 16-20 min, until toothpick comes out clean
Step 7
Transfer muffins from the pans to a cooling rack once removed These can be stored in the refrigerator for up to 2 weeks and can be stored in the freezer for several months
