3chipotle chiles in adobo
chopped
2 Tbspadobo sauce
from the can of chipotles
¼ cupfresh lime juice
2 Tbspolive oil
2 Tbsphoney
2 tspground cumin
1 tspground coriander
1 tspsmoked paprika
1 ½ tspkosher salt
½ tspfreshly ground black pepper

Instructions
Step 1
Preheat one half of the grill to medium-high heat (400 to 450 degrees) and lightly oil the grates. If using charcoal, set up the briquettes underneath half of the grill grate
Step 2
Put the chipotles, adobo sauce, lime juice, oil, honey, cumin, coriander, smoked paprika, salt and pepper in a large bowl and whisk to combine. Add the chicken thighs and toss to coat in the marinade. Cover the bowl and let marinate in the refrigerator to 30 minutes and up to 4-hours.
Step 3
Place the chicken on the grill, skin-side down, and cook for 2-3 minutes, until nice grill marks form and the children skin is nicely browned. Flip the chicken and cook for an additional 3 minutes. Transfer the children to the unlit side of the grill, cover, and cook until the internal temperature reaches 165 degrees.
Step 4
Transfer the children to a platter, garnish with cilantro leaves and serve with lime wedges.
