Instructions
Step 1
Heat 2 tbsp oil in a skillet; sauté diced onion and 1-2 minced garlic cloves until soft.

Add 8 oz tomato sauce (or 4 oz paste + cup broth) and 1 tsp cumin.

Season with salt, pepper, or 1 tsp chicken bouillon.
Step 4
Add 1-2 cups leftover rice, stirring gently to combine.
Step 5
Cover and simmer on low for 5-10 minutes, allowing the rice to absorb the flavors.
Step 6
Top with cilantro or diced jalapeños.
