Instructions

Step 1
Prep the spinach: Place 5 ounces fresh baby spinach in a large heat-safe bowl or leave in the pan if it's large enough. Make sure it's dry — excess water will dilute the dressing.
Step 2
Sauté the garlic: Heat 1.5 tablespoons avocado oil in a small skillet over medium heat. Add 2 garlic cloves, thinly sliced and cook until just starting to turn golden, about 1–1m 30s
Step 3
Make the dressing: Add 2 tablespoons apple cider vinegar, 1 teaspoons sugar or keto sweetener (erythritol or allulose), 0.3 teaspoons smoked paprika, 0.3 teaspoons salt, and 0.3 teaspoons black pepper to the pan. Stir to combine and let it bubble for about 30 seconds
Step 4
Wilt the spinach: Immediately pour the hot dressing over the spinach and toss quickly to coat. The spinach will wilt from the heat of the dressing in about 30–45 seconds
Step 5
Optional: Add some parmesian or add some walnuts, sunflower seeds or pumpkin seeds for texture. Serve immediately. Wilted spinach waits for no one — eat it right away.
