Instructions

Step 1
Cook the pasta in boiling, salted water until al dente, then drain and cool immediately.
Step 2
Slice the onion and carrots into thin strips, and mince the garlic.
Step 3
Thaw the frozen vegetable mix, then drain it as thoroughly as possible.
Step 4
In a very hot skillet, sauté all the vegetables thoroughly in 4–5 tablespoons of oil. Be sure to maintain the highest possible heat at all times.
Step 5
When the vegetables are golden brown, push them to one side of the pan and crack 2 whole eggs into the pan; scramble them a bit until dry. Then add another 4–5 tablespoons of oil and the noodles.
Step 6
Sauté for a few more minutes, pour in the soy sauce, add the honey, chili, ginger, and peanuts, season with pepper, toss everything together, and after sautéing for 2–3 minutes, it’s ready.
