Step 1

Add rice, water, basil, salt, and pepper to a medium pot. Cover with a lid and bring to a boil. When boiling, reduce heat to low, and let the rice simmer (covered) until all the water has been absorbed, about 45 minutes
Step 2
Remove from the heat, and add in diced tomatoes, garlic, and grated cheese. Stir until fully combined
Step 3
Crack in your eggs, and beat with a wooden spoon. Return the pot to the heat over medium, and cook with frequent stirring, until set and creamy, about 5-10 minutes
