Instructions
Step 1
Cook the rice - rinse with water, 2:1 water:rice, 20 mins in microwave
Step 2
Combine the cubed chicken and seasonings in a bowl and toss until evenly coated.
Step 3
Cook the chicken inhot oil for 7 - 8 mins until chicken is cooked thorugh and browned.
Step 4
Remove chicken from the pan and make the sauce in the pan and stir over a medium heat until it thickens.
Step 5
Add the cooked chicken back into the sauce, coat fully and cook for another minute to allow the sauce to attach to the chicken
Step 6
Thinly slice cucumber and toss with the remaining ingredients.
Step 7
Divide between 4 bowls.
