A warming Indian masala chai for two made with Assam black tea, milk (or oat milk), ginger, cardamom, cinnamon, peppercorns, and sugar, simmered and strained.

Instructions
Step 1
Crush fresh ginger, cardamom, cinnamon, peppercorns, and clove. Set aside.
Step 2
Add water. Set it to medium high heat.
Step 3
When the water simmers, add tea and the crushed spices.
Step 4
When the water comes to a vigorous boil, add milk.
Step 5
Stir and let it simmer undisturbed with the lid open.
Step 6
Turn the heat to low when you see a rolling boil.
Step 7
Let it simmer for 30 seconds and turn the heat off.
Step 8
Add sugar.
Step 9
Filter.
Step 10
Aerate.
Step 11
Serve.
