Instructions

Step 1
Toast almonds in a dry pan over medium heat (3–5 min), until lightly golden. Cool.
Step 2
Segment oranges (or cut into bite-size pieces, but segments look nicer and are less watery).
Step 3
Thinly slice red onion (if using) and soak in cold water 5–10 min to mellow bite.
Step 4
Whisk dressing ingredients together.
Step 5
Right before serving:
Step 6
Toss arugula lightly with dressing (start with ~2/3 of it)
Step 7
Add citrus + onion + almonds
Step 8
Toss gently again
Step 9
