Instructions

Step 1
Heat the oil in a large heavy nonstick pan, add all the spices and fry in the oil for 2 minutes.
Step 2
Fry the sliced onions with the spices until well softened.
Step 3
Push the onions to the side and fry the chicken skin side down for 10 minutes before turning and frying for a further 10 minutes.
Step 4
Add the couscous and boiling water, cover and simmer for approximately 25 minutes until all the water has been absorbed.
Step 5
Season to taste with salt and black pepper before serving.
