Instructions
Step 1
Cut ginger, garlic, chillies, and scallions.
For the marinade
Step 2
Mix ginger, garlic, and wine (3/4 cup). Add salt and pepper.
Step 3
Pat wings dry and marinade for 30 minutes.
Step 4
Heat 2 cups of oil in a pot.
Step 5
Coat wings in cornstarch and dip into pot, frying for 7 minutes each side.
Step 6
Place wings on paper towel to drain.
Step 7
Stir fry butter, chilli, scallions, garlic, and chicken in a wok.
