King prawn, lemon & chilli linguine

A quick, luxurious linguine tossed with king prawns, cherry tomatoes, garlic and red chillies, finished with fresh parsley plus lemon zest and juice for a bright, spicy sauce.

Instructions

Step 1
COOK the linguine following the pack instructions. Meanwhile, spray a large non-stick frying pan with cooking spray and put over a medium-high heat. When hot, fry the tomatoes for 5-6 minutes with a splash of water until softening.
Step 2
Add the prawns and cook for 3-4 minutes until completely pink, turning halfway. While the prawns are cooking, mix together the garlic, chillies and lemon zest and juice, and season.
Step 3
WHEN the linguine is ready, transfer a ladle of the cooking water to the prawns, then drain and add the linguine too, along with the chilli mixture. Use tongs to stir everything together over the heat until the liquid has reduced down completely and the tomatoes have collapsed. Stir through the parsley, then divide between bowls and serve.
