Instructions
Step 1
Make oat flour: Add 2 cups certified GF rolled oats (blended into flour) to your Nutribullet and blend 30–45 seconds until a fine flour forms. Transfer to a mixing bowl.
Step 2
Mix dry ingredients: Whisk 0.3 cups tapioca starch, 1.5 teaspoons baking powder (GF), and 0.3 teaspoons fine sea salt into the oat flour until evenly combined.
Step 3
Whisk wet ingredients: In a separate bowl, whisk together egg, extra virgin olive oil, orange zest, orange juice, and vanilla extract until smooth.
Step 4
Chill the dough: Cover bowl and refrigerate for 25 minutes
Step 5
Preheat & prep pan: Preheat your toaster oven to 375°F. Line a cookie sheet with parchment or a silicone mat.
Step 6
Shape scones: Turn chilled dough onto a lightly oat-floured surface. Pat into a circle about ¾-inch thick. Cut into 8 wedges and transfer to your prepared cookie sheet with a little space between each.
Step 7
Bake: Bake at 375°F for 16–19 minutes
Step 8
Cool: Let scones cool on the pan for 5 minutes
