Air Fryer Coconut Blondies

I've never tried baking anything with my air fryer ... until today. These easy coconut blondies are air fried for a golden and crispy outside, with a soft and gooey inside. Using coconut flour instead of white flour and sugar free syrup instead of white sugar, these blondies are both gluten free and sugar free. The combination of coconut and banana gives additional flavor and sweetness. The yogurt adds protein while keeping the blondies from drying out without the need for butter or oil.

Step 1
Preheat your air fryer to 300F on air fry mode. Lightly grease an air fryer liner with oil

In a large bowl, mash your banana with the back of a fork until smooth. Add in the rest of the ingredients (yogurt, sugar free syrup, baking powder, salt, coconut flour, and coconut flakes), and mix until fully combined with a silicone spatula
Step 3

Transfer the batter to your air fryer liner
Step 4

Air fry at 300F for 30 minutes, or until the top is golden brown, and a toothpick to the center comes out clean
Step 5
Put the blondies back in the air fryer, and turn it off. Let them sit in the air fryer for about an hour
Step 6

Remove from the air fryer, and allow them to cool totally before removing from the pan and cutting into 9 squares
