Instructions

Step 1
Wash and dice potatoes.
Step 2
Put potatoes in crockpot. Add broth, water, salt, pepper, thyme, and Cajun seasoning.
Step 3
Cook on HIGH for 3 hours.
Step 4
On the stove Cook bacon until crispy. Drain grease leaving 1 tbsp in the pan.
Step 5
In the same pan add sausage and cook until slightly brown. Next add onion and cook until soft. Then add garlic and cook for 1 minute.
Step 6
Add bacon mixture back to the crockpot.
Step 7
Add cheddar cheese, evaporated milk, half & half, and cream cheese. Stir well.
Step 8
Cook on HIGH for 2 more hours.
Step 9
Taste and adjust seasoning if needed.
Step 10
Serve.
Step 11
Top with green onions and extra cheese if desired.
